
Lemon herb salad dressing
- 1/4 cup lemon juice
- 2 teaspoons grated lemon zest
- 2 teaspoons Dijon mustard
- 1/2 cup olive oil
- 1 tablespoon red wine vinegar
- 2 tablespoons parsley, finely chopped
- 2 teaspoons chives, finely chopped
- Place all ingredients in a medium jar with a tight-fitting lid, and shake to combine.
- Can keep in the refrigerator for up to 5 days. Shake well before serving.
